Ingredients

  • 2 apples, diced (Honeycrisp or Granny Smith)
  • 2 eggs
  • 1 cup milk of choice (dairy or non-dairy)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 tablespoons butter or coconut oil, melted (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin pan well.
  2. Dice your apples into small pieces.
  3. In a large bowl, mix oats, baking powder, cinnamon, and salt.
  4. In another bowl, whisk eggs, milk, maple syrup, vanilla, and melted butter or oil.
  5. Pour the wet ingredients into the dry. Stir until combined, then fold in the diced apples.
  6. Scoop the mixture into the muffin pan and press down gently.
  7. Bake for about 20 to 25 minutes until the tops are set.
  8. Cool for 10 minutes before removing from the pan.

Notes

These oatmeal cups freeze well, and they can be reheated easily in the microwave or oven. Consider adding toppings like yogurt, sliced bananas, or peanut butter when serving.
