Ingredients
  

For Meringue

  • 3 large egg whites
  • 1/2 tea spoons vanila extract
  • 1/4 tea spoons cream of tartar
  • 3/4 cup sugar

For Lemon Curd:

  • 4 large eggs
  • 1-1/3 cups sugar
  • 1/3 cup lemon juice
  • 4 tea spoons grated lemon zest
  • 3 table spoons butter

Instructions
 

  • Take egg whites in a large bowl and leave them at room temperature for 30 minutes. Then add vanilla and cream of tartar and beat on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, and beat on high speed until stiff peaks form.
  • Take a pastry or plastic bag and make a small hole in the corner to insert a 24-star tip. Now fill the bag with meringue and make 1-inch circles onto a parchment-lined baking sheet. Keep a gap of 2 inches between the circles. Make one or 2 circles over the edge of the base to form sides.
  • Bake the meringue at 300°F for 25 minutes and turn off the oven. For better results, leave meringues in the oven for 1 hour.
  • To prepare lemon curd, place a heavy saucepan over medium heat and add the eggs, sugar, lemon juice, and zest. Now continuously whisk until all the ingredients are well blended. Then add butter and keep constantly whisking until the mixture is thickened. Now transfer the mixture onto a small bowl and let it cool for 10 minutes. Your lemon curd is ready. Place a cover on the bowl and keep it in the refrigerator until chilled.
  • Put a spoon of lemon curd into the center of the cookies just before serving.

Notes

Prepare the meringues a few days before serving and store them in an airtight container. You can make the lemon curd the day before serving and refrigerate it with a cover
