Ingredients
  

  • 2 cups zucchini grated
  • 3 teaspoons vanilla extract
  • 1 cup pecans chopped
  • 3 eggs
  • 2 cups sugar
  • 3/4 cups vegetable oil
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1/2 cup raisins

Instructions
 

  • Once the batter is prepared, pour it carefully into the floured and greased Bundt pan.
  • Bake the bread at 350 degrees Fahrenheit for 45 minutes.
  • Insert a toothpick in the bread, and if it comes out clean, then your zucchini bread is done.
  • Allow the bread to cool down to room temperature.
  • Give the pan a good shake from the sides and thump it from the bottom.
  • Overturn the Bundt pan carefully on a plate.
  • Your zucchini bread is ready to be sliced and eaten.

Notes

The Bread will stay fresh for over a month. Take out as many slices as you want when you have to eat them, and let it thaw down to room temperature. Then heat them in a toaster, slather on some butter, and you are good to go.
