- 4 cups watermelon, cubed
- 2 cups cucumber, diced
- 1 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint, chopped

Instructions
- Start by preparing all your ingredients. Chop the watermelon into bite-sized cubes, making sure to remove any seeds. Then, wash and dice the cucumber into pieces roughly the same size as the watermelon. Thinly slice the red onion, crumble the feta cheese, and finely chop fresh mint leaves.
- In a large bowl, combine the cubed watermelon, diced cucumber, sliced red onion, crumbled feta cheese, and chopped mint leaves. Toss gently to mix everything without crushing the watermelon.
- After mixing, whisk together olive oil and lime juice in a small bowl, then season with salt and pepper to taste. Drizzle the dressing over the salad and toss gently to coat.
- Chill the salad in the refrigerator for about 30 minutes before serving to enhance the flavors.
Notes
For a lighter option, substitute feta with goat cheese or a dairy-free alternative. Best enjoyed fresh, can be stored for up to 2 days.
