1 (20 oz) can crushed pineapple with juice (do not drain)

1 cup cottage cheese (blend 1520 seconds for ultra-smooth, optional)

8 oz whipped topping, thawed

1 1/2 cups mini marshmallows

1/2 cup chopped pistachios, plus more for topping

Maraschino cherries, for garnish (optional)

Instructions

  1. Combine pudding and pineapple: In a large bowl, mix crushed pineapple with its juice and instant pistachio pudding. Stir 1–2 minutes until the mixture turns creamy green with no dry spots.
  2. Fold in the fluff: Add whipped topping and gently fold until just blended. Fold in cottage cheese (blended or as-is), then mini marshmallows and half the pistachios. Mix gently to keep the texture airy.
  3. Chill and serve: Cover the bowl and refrigerate for 1–2 hours. Fluff before serving and top with remaining pistachios and cherries. Keep refrigerated and enjoy within 3 days.

Notes

For a smoother bite, blend the cottage cheese before folding it in.
