Ingredients

  • 2 cans white beans (cannellini or navy)
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 1 tablespoon mustard
  • 1 tablespoon apple cider vinegar
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C). If desired, lightly grease your baking dish.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until softened (3-5 minutes).
  3. In a mixing bowl, combine the sautéed onion and garlic with the white beans, ketchup, brown sugar, mustard, and apple cider vinegar. Season with salt and pepper.
  4. Transfer the mixture to the prepared baking dish and cover with foil. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes.
  5. Serve warm and enjoy!

For a healthier option, substitute ketchup with homemade tomato sauce or use less sugar.
