Ingredients

  • 1 Sheet Puff Pastry
  • 2 Cups Mixed Vegetables (Carrots, Bell Peppers, Mushrooms, etc.)
  • 1 Onion, Chopped
  • 2 Cloves Garlic, Minced
  • 1 Cup Spinach
  • 1 Tablespoon Olive Oil
  • Salt and Pepper, To Taste
  • 1 Egg (For Egg Wash), Optional

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pan, heat the olive oil over medium heat. Sauté the onions and garlic for about 3–4 minutes until fragrant and translucent.
  3. Add in the mixed vegetables and spinach, cooking until they are tender—approximately 5–7 more minutes. Season with salt and pepper.
  4. Roll out your puff pastry on a lightly floured surface, forming a rectangle. Spoon the vegetable mixture into the center.
  5. Fold the pastry over the filling, sealing the edges. Brush the top with an egg wash if desired.
  6. Bake for 25–30 minutes until the pastry is golden brown and puffed.
  7. Let the Wellington cool for a few minutes before slicing to serve.
