- 1 cup Raw cashews, soaked
- 1/4 cup Nutritional yeast
- 1/4 cup Coconut cream
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1/2 tsp Salt
- 1/2 cup Dried cranberries, chopped
- 1/2 cup Pistachios, chopped
Instructions
- Start by soaking your cashews in water for at least 2 hours.
- After soaking, drain and rinse the cashews, then place them in a food processor alongside the nutritional yeast, coconut cream, garlic powder, onion powder, and salt. Blend until the mixture is silky smooth.
- Stir in the chopped dried cranberries and half of the chopped pistachios. Shape the mixture into a ball and roll in the remaining pistachios until well-coated.
- Cover with plastic wrap and chill in the refrigerator for at least 2 hours.
Notes
This cheese ball can be made a day in advance. Just roll in the chopped nuts before serving to maintain crunch.
