Ingredients

  • 1 cup Raw cashews, soaked
  • 1/4 cup Nutritional yeast
  • 1/4 cup Coconut cream
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Salt
  • 1/2 cup Dried cranberries, chopped
  • 1/2 cup Pistachios, chopped

Instructions

  1. Start by soaking your cashews in water for at least 2 hours.
  2. After soaking, drain and rinse the cashews, then place them in a food processor alongside the nutritional yeast, coconut cream, garlic powder, onion powder, and salt. Blend until the mixture is silky smooth.
  3. Stir in the chopped dried cranberries and half of the chopped pistachios. Shape the mixture into a ball and roll in the remaining pistachios until well-coated.
  4. Cover with plastic wrap and chill in the refrigerator for at least 2 hours.

Notes

This cheese ball can be made a day in advance. Just roll in the chopped nuts before serving to maintain crunch.
