Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter with the granulated sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
- Gradually mix in the dry ingredients until just combined, then fold in the chopped strawberries.
- Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes, or until set. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- For the chocolate coating, melt chocolate chips in a microwave-safe bowl using 30-second increments, stirring until smooth. Dip the cooled cookie bottoms into the melted chocolate, letting excess drip off. Place cookies back on parchment paper and sprinkle with sprinkles if desired. Allow the chocolate to set before serving.
