A quick, healthy, high-protein, and gluten-free bread made with just cottage cheese and eggs. Fluffy inside with a golden crust, perfect for breakfast, snacks, or sandwiches.

  • 4 large eggs

Instructions

  1. Preheat and prepare pan:Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper to prevent sticking.
  2. Mix ingredients:In a mixing bowl, combine cottage cheese and eggs. Blend until smooth using a hand mixer, whisk, or fork.
  3. Transfer to pan:Pour the batter into the prepared loaf pan. Shake gently to level out the top.
  4. Bake:Bake for 30–35 minutes until golden-brown on top. The loaf should be firm to touch.
  5. Cool and serve:Let the bread cool for 10 minutes before slicing. Serve as toast, with spreads, or in sandwiches.

Notes

You can use low-fat cottage cheese for a lighter option. Add herbs or spices for extra flavor. Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for longer storage.
