- 1 large thin pizza crust (store-bought or homemade, approximately 12 inches)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 medium tomatoes, finely chopped
- 4 large eggs
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- 2.1 ounces feta cheese, crumbled
- 2 tablespoons flat-leaf parsley, chopped
- 1 tablespoon olive oil (for brushing the crust)
Instructions
- Preheat your oven to 425°F (220°C) and place a pizza stone or baking tray inside.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the onion, green bell pepper, and red bell pepper, and sauté for about 4 to 5 minutes until softened.
- Add the chopped tomatoes, paprika, ground cumin, and optional red pepper flakes to the skillet, simmering for an additional 5 minutes. Then crack the eggs into the mixture and stir gently, cooking for 2 to 3 minutes until softly scrambled. Season with salt and black pepper to taste.
- Brush the pizza crust with 1 tablespoon of olive oil. Spread the menemen mixture evenly over the crust and top with crumbled feta cheese.
- Bake for about 8 to 10 minutes until the crust is golden and crisp. Garnish with fresh parsley before serving.
Notes
For a crispy crust, always preheat the pizza stone. Experiment with spices for added heat.
