A creamy and zesty potato salad that’s perfect for any gathering or picnic.

Ingredients

  • 2 pounds potatoes
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 cup celery (chopped)
  • 1/2 cup red onion (chopped)
  • Salt and pepper to taste
  • Optional: hard-boiled eggs (chopped)
  • Optional: fresh herbs (chopped parsley or dill)

Instructions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 to 20 minutes. Drain and let cool.
  2. Once cooled, cut the potatoes into bite-sized cubes and transfer to a mixing bowl. Add chopped celery, red onion, and any optional ingredients.
  3. In a separate bowl, mix mayonnaise and Dijon mustard until smooth. Pour over the potatoes and fold gently to coat. Season with salt and pepper, then let chill in the refrigerator for at least an hour.

Notes

For a healthier option, substitute Greek yogurt for mayonnaise. Can be paired with grilled meats or sandwiches for a perfect picnic combination.
