Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • Additional shredded coconut (for garnish), to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease Bundt pan with butter or cooking spray.
  2. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  3. Add eggs one by one, mixing well after each addition. Stir in sour cream and vanilla extract until fully mixed.
  4. In another bowl, whisk together flour, baking powder, baking soda, salt, and shredded coconut. Gradually fold dry ingredients into wet mixture, being careful not to overmix.
  5. Pour the batter into the prepared Bundt pan and smooth the surface. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cake to cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
  7. For the glaze, mix powdered sugar with milk until smooth and drizzle over the cooled cake. Sprinkle with additional coconut for decoration. Slice and serve!

Notes

For a vegan version, swap eggs for flax eggs and use coconut oil instead of butter. Add lime zest or chocolate chips for variations.
