- 1 cup all-purpose flour (120 g)

- 5 large eggs, separated
- 1 cup granulated sugar, divided (200 g)

- 1 teaspoon vanilla extract (5 ml)
- 12 ounce can evaporated milk (354 ml)
- 14 ounce can sweetened condensed milk (396 ml)
- 1/4 cup whole milk (60 ml)
- 1 pint heavy whipping cream (475 ml)
- 3 Tablespoons powdered sugar (24 g)
- 1/2 teaspoon vanilla extract (2.5 ml)
- Ground cinnamon, for topping
Instructions
- Preheat your oven to 350°F (175ºC). In a medium bowl, combine flour, baking powder, and salt. Mix well and set aside.
- Separate the egg yolks and whites into two different mixing bowls. Add 3/4 cup of granulated sugar to the bowl with egg yolks. Mix on high speed until the yolks become pale yellow. Then, incorporate 1/3 cup of whole milk and vanilla extract into the mix, stirring gently.
- Pour the egg yolk mixture over the dry ingredients, being careful not to over-mix. Next, whip the egg whites using an electric mixer until they form stiff peaks, gradually adding the remaining 1/4 cup granulated sugar until well combined. Gently fold the egg whites into the batter, making sure to scrape the bowl’s bottom and sides.
- Pour the batter into an ungreased baking pan, smoothing it into an even layer. Bake for 25 to 35 minutes, or until a toothpick inserted in the center comes out clean. Remove the cake from the oven and allow it to cool completely on a wire rack.
- Mix together the evaporated milk, sweetened condensed milk, and whole milk in a separate bowl. Once the cake is cool, use a fork to poke holes all over the top. Slowly pour the milk mixture over the cake, letting it soak in. Finally, refrigerate for at least one hour—overnight is best for full flavor absorption.
- Whip the heavy cream with powdered sugar and vanilla extract until it reaches stiff peaks. Spread it over the cake and sprinkle with ground cinnamon. Serve with fresh sliced strawberries for an added touch of sweetness.
