Ingredients

  • 4 medium zucchinis, sliced into rounds
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 ½ cups shredded Mexican blend cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Layer sliced zucchini in the base of a baking dish.
  3. Spoon black beans, corn, and salsa over the zucchini.
  4. Sprinkle cumin, chili powder, salt, and pepper on top.
  5. Add the shredded cheese followed by a drizzle of olive oil.
  6. Cover with foil and bake for 25 minutes. Remove foil for the last 10-15 minutes.
