Ingredients

- 4 medium zucchinis, sliced into rounds
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 ½ cups shredded Mexican blend cheese
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Layer sliced zucchini in the base of a baking dish.
- Spoon black beans, corn, and salsa over the zucchini.
- Sprinkle cumin, chili powder, salt, and pepper on top.
- Add the shredded cheese followed by a drizzle of olive oil.
- Cover with foil and bake for 25 minutes. Remove foil for the last 10-15 minutes.

This dish can be served as a side or main course. Feel free to experiment with proteins like shredded chicken or quinoa.
