- 3 large sweet onions (such as Vidalia), sliced into ¼-inch rings
- 4 tablespoons unsalted butter, melted
- 1 cup sharp cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- ½ cup Parmesan cheese, grated
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning (or dried thyme/oregano blend)
- ¼ teaspoon paprika
- Pinch of salt and black pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly butter or spray a 9×13-inch baking dish.
- Layer the sliced onion rings in the baking dish, drizzle with melted butter, and sprinkle garlic powder, Italian seasoning, paprika, salt, and pepper over the onions.
- In a separate bowl, mix the cheeses and scatter over the seasoned onions.
- Cover the dish with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, or until golden and bubbly.
- Cool for 5 minutes before serving.
