  • 4 cups Roasted Sweet Potatoes, mashed
  • 1/2 cup Maple Syrup
  • 1/4 cup Brown Sugar
  • 1/2 cup Raisins
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 2 cups Mini Marshmallows
  • 1 cup Chopped Pecans
  • 1/4 cup Melted Coconut Oil (or Butter)
  • 1/2 cup Oats

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine , In a large mixing bowl, the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg. Mix until creamy.
  3. Spread the sweet potato mixture evenly in a greased baking dish.
  4. Top generously with mini marshmallows.
  5. Mix In another bowl, chopped pecans, melted coconut oil, and oats for the crunchy topping and sprinkle over the marshmallows.
  6. Bake for 30-35 minutes, until the topping is golden brown and the casserole is heated through.

Notes

Cover with aluminum foil if the marshmallows brown too quickly during baking.
