- 4 cups Roasted Sweet Potatoes, mashed
- 1/2 cup Maple Syrup
- 1/4 cup Brown Sugar
- 1/2 cup Raisins
- 1 teaspoon Cinnamon
- 1/2 teaspoon Nutmeg
- 2 cups Mini Marshmallows
- 1 cup Chopped Pecans
- 1/4 cup Melted Coconut Oil (or Butter)
- 1/2 cup Oats
Instructions
- Preheat your oven to 350°F (175°C).
- Combine , In a large mixing bowl, the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg. Mix until creamy.
- Spread the sweet potato mixture evenly in a greased baking dish.
- Top generously with mini marshmallows.
- Mix In another bowl, chopped pecans, melted coconut oil, and oats for the crunchy topping and sprinkle over the marshmallows.
- Bake for 30-35 minutes, until the topping is golden brown and the casserole is heated through.
Notes
Cover with aluminum foil if the marshmallows brown too quickly during baking.
