Ingredients

  • 2 medium Sweet Potatoes
  • 1/2 cup Greek Yogurt
  • 1/4 cup Granola
  • 1 tablespoon Honey
  • 1/2 teaspoon Cinnamon
  • Fresh Berries (optional) to taste
  • Chopped Nuts (optional) to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork.
  3. Place sweet potatoes directly on the oven rack and bake for 45-60 minutes or until tender when pierced with a fork.
  4. Remove the sweet potatoes from the oven and let cool slightly.
  5. Cut the sweet potatoes in half and scoop out a portion to create ‘bowls.’
  6. In a separate bowl, mix Greek yogurt with honey and cinnamon.
  7. Spoon the yogurt mixture into the sweet potato halves and top with granola, fresh berries, and chopped nuts if desired. Serve warm and enjoy!

Notes

For a dairy-free version, use coconut yogurt instead of Greek yogurt. You can also substitute honey with maple syrup for a different flavor.
