- 2 large Sweet Potatoes (peeled and diced)
- 4 ounces Feta Cheese (crumbled)

- 3 tablespoons Olive Oil
- 2 tablespoons Balsamic Vinegar
- Salt & Pepper to taste
- Nuts or Seeds (optional, for topping)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss diced sweet potatoes in a bowl with olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, stirring midway, until tender and lightly browned.
- In a large bowl, combine roasted sweet potatoes, mixed greens, and crumbled feta cheese.
- Drizzle balsamic vinegar over the top and gently toss to combine.
- If desired, sprinkle nuts or seeds on top. Serve immediately or refrigerate for later.
Notes
For a sweeter twist, consider adding dried cranberries or sliced fresh fruit. This salad pairs well with grilled chicken or shrimp for a heartier meal.
