Ingredients

  • 2 large Sweet Potatoes (peeled and diced)
  • 4 ounces Feta Cheese (crumbled)
  • 4 cups Mixed Greens (spinach and arugula)
  • 3 tablespoons Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • Salt & Pepper to taste
  • Nuts or Seeds (optional, for topping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced sweet potatoes in a bowl with olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, stirring midway, until tender and lightly browned.
  4. In a large bowl, combine roasted sweet potatoes, mixed greens, and crumbled feta cheese.
  5. Drizzle balsamic vinegar over the top and gently toss to combine.
  6. If desired, sprinkle nuts or seeds on top. Serve immediately or refrigerate for later.

Notes

For a sweeter twist, consider adding dried cranberries or sliced fresh fruit. This salad pairs well with grilled chicken or shrimp for a heartier meal.
