  • 1½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup melted unsalted butter
  • 24 ounces softened cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Prepare the strawberry sauce: In a small saucepan, combine hulled strawberries, sugar, and lemon juice. Cook until strawberries soften. Mash and add the cornstarch slurry, cooking until thickened. Cool completely.
  2. Prepare the crust: Preheat the oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 8-10 minutes and cool.
  3. Make the filling: Beat softened cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, sour cream, and heavy cream. Mix until just combined.
  4. Assemble: Pour filling into the crust, drop strawberry sauce on top, and swirl.
  5. Bake: Place the pan in a larger baking dish with water. Bake for 55-65 minutes or until edges set and center jiggles. Cool with oven door cracked for 1 hour.
  6. Chill: Refrigerate for at least 6 hours before serving.
