  • 1 cup milk
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract

  • 1 cup fresh strawberries, pureed
  • 1 cup fresh strawberries, diced (for frosting)
  • ½ cup unsalted butter (for frosting)
  • 3-4 cups powdered sugar
  • 2-3 tbsp heavy cream or milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a sheet cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract and strawberry puree.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture, alternating with the milk, and mix just until combined.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan before frosting.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend. It’s also delicious served with vanilla ice cream or whipped cream.
