- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- ½ tsp salt
- 1 cup fresh strawberries, pureed
- 1 cup fresh strawberries, diced (for frosting)
- ½ cup unsalted butter (for frosting)
- 3-4 cups powdered sugar
- 2-3 tbsp heavy cream or milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a sheet cake pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract and strawberry puree.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture, alternating with the milk, and mix just until combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely in the pan before frosting.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. It’s also delicious served with vanilla ice cream or whipped cream.
