  • 1 cup frozen unsalted butter
  • 2 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp fine sea salt
  • 1 tsp vanilla bean paste
  • 1/4 cup chilled water
  • 1 tsp apple cider vinegar
  • 1 beaten egg
  • 1 cup diced rhubarb
  • 1 cup hulled and quartered strawberries
  • 1/4 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 cup powdered sugar
  • 2 tbsp whole milk
  • 1 tsp vanilla extract
  • 1/2 cup reserved strawberry rhubarb jam
  • 1/4 cup white sprinkles

Instructions

  1. Freeze the butter until completely solid, about 1 hour.
  2. Grate the frozen butter using a box grater, then return it to the freezer.
  3. Combine the all-purpose flour, granulated sugar, and salt in a stand mixer bowl. Add the shredded butter and mix until coated.
  4. Mix ice-cold water and vinegar, then drizzle in with the mixer on low until the dough forms large clumps.
  5. Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least one hour.
  6. Prepare the filling by combining diced rhubarb, quartered strawberries, granulated sugar, and lemon juice in a bowl. Cook over medium heat for about 10-15 minutes until thickened.
  7. Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into rectangles.
  8. Spoon the cooled strawberry-rhubarb filling onto half the rectangles.
  9. Roll out the second disc, cut rectangles to cover the filled ones, seal edges with a fork.
  10. Brush each pop tart with beaten egg and cut slits on top to allow steam to escape.
  11. Bake in an oven at 375°F for about 25-30 minutes until golden brown. Allow to cool before icing.

Notes

Chilling the dough is critical for a flaky crust. Use different fruit combinations for filling variations.
