- 1 cup frozen unsalted butter
- 2 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp fine sea salt
- 1 tsp vanilla bean paste
- 1/4 cup chilled water
- 1 tsp apple cider vinegar
- 1 beaten egg
- 1 cup diced rhubarb
- 1 cup hulled and quartered strawberries
- 1/4 cup granulated sugar
- 1 tbsp fresh lemon juice
- 1 cup powdered sugar
- 2 tbsp whole milk
- 1 tsp vanilla extract
- 1/2 cup reserved strawberry rhubarb jam
- 1/4 cup white sprinkles
Instructions
- Freeze the butter until completely solid, about 1 hour.
- Grate the frozen butter using a box grater, then return it to the freezer.
- Combine the all-purpose flour, granulated sugar, and salt in a stand mixer bowl. Add the shredded butter and mix until coated.
- Mix ice-cold water and vinegar, then drizzle in with the mixer on low until the dough forms large clumps.
- Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least one hour.
- Prepare the filling by combining diced rhubarb, quartered strawberries, granulated sugar, and lemon juice in a bowl. Cook over medium heat for about 10-15 minutes until thickened.
- Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut into rectangles.
- Spoon the cooled strawberry-rhubarb filling onto half the rectangles.
- Roll out the second disc, cut rectangles to cover the filled ones, seal edges with a fork.
- Brush each pop tart with beaten egg and cut slits on top to allow steam to escape.
- Bake in an oven at 375°F for about 25-30 minutes until golden brown. Allow to cool before icing.
Notes
Chilling the dough is critical for a flaky crust. Use different fruit combinations for filling variations.
