- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup strawberry jam
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- Sprinkles (for topping, as desired)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar in a large bowl until light and fluffy (about 3 minutes).
- Add in the egg and vanilla extract, mixing until well combined.
- In a separate bowl, combine flour, baking soda, and salt, then gradually mix into the wet mixture.
- Scoop tablespoon-sized balls of dough onto the baking sheets, spacing about 2 inches apart. Make a small indentation in each cookie and fill with a dollop of strawberry jam.
- Bake for 10-12 minutes until the edges are lightly golden. Allow to cool on the sheets for 5 minutes before transferring to a wire rack.
- Prepare the glaze by whisking together powdered sugar and milk, then drizzle over cooled cookies and top with sprinkles if desired.
Notes
Store leftovers in an airtight container at room temperature for up to a week. You can also freeze these cookies for up to three months.
