- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1/2 teaspoon salt
- 2 cups fresh strawberries, chopped
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat your oven to 350°F and line an 8-inch square pan with aluminum foil, then spray with cooking spray.
- Melt unsalted butter in a microwave-safe bowl, about 1 minute on high power.
- Add flour, oats, both sugars, and salt into the melted butter and mix until it resembles a dry, sandy mixture.
- Set aside one heaping cup of the mixture for the topping and press the rest firmly into the prepared pan.
- Combine coarsely chopped strawberries, sugar, lemon juice, and cornstarch in a separate bowl, stirring well to coat.
- Spread the strawberry mixture evenly over the crust and sprinkle the reserved crumble mixture on top.
- Bake for about 30 minutes, or until the top is golden brown and strawberries are bubbly.
- Let cool completely in the pan before slicing into bars.
Notes
Let cool completely for best slicing results. You can use other fruits like peaches or blueberries if strawberries aren’t in season.
