  • 1 pre-made graham cracker pie crust
  • 1 pound fresh strawberries, hulled and sliced (divided)
  • 1 cup heavy cream (35% fat), cold
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 packet unflavored gelatin (about 2½ teaspoons)
  • 2 tablespoons cold water

Instructions

  1. Bloom the gelatin by sprinkling it over cold water in a small bowl and let it sit for 5 minutes.
  2. Hull and slice the strawberries, reserving some beautiful slices for garnish, and mash half of the remaining strawberries.
  3. Whip the cold heavy cream with powdered sugar and vanilla extract until soft peaks form.
  4. Fold the mashed strawberries into the whipped cream, then drizzle in the cooled gelatin mixture while folding gently.
  5. Pour the mousse mixture into the graham cracker crust and spread evenly, then arrange the reserved strawberry slices on top.
  6. Chill in the refrigerator for at least 4 hours or preferably overnight before serving.

Notes

Serve with a scoop of ice cream or a dollop of whipped cream for an extra indulgence. Refrigerate the pie for up to three days to keep it fresh.
