- 1 pre-made graham cracker pie crust
- 1 pound fresh strawberries, hulled and sliced (divided)
- 1 cup heavy cream (35% fat), cold
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 packet unflavored gelatin (about 2½ teaspoons)
- 2 tablespoons cold water
Instructions
- Bloom the gelatin by sprinkling it over cold water in a small bowl and let it sit for 5 minutes.
- Hull and slice the strawberries, reserving some beautiful slices for garnish, and mash half of the remaining strawberries.
- Whip the cold heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Fold the mashed strawberries into the whipped cream, then drizzle in the cooled gelatin mixture while folding gently.
- Pour the mousse mixture into the graham cracker crust and spread evenly, then arrange the reserved strawberry slices on top.
- Chill in the refrigerator for at least 4 hours or preferably overnight before serving.
Notes
Serve with a scoop of ice cream or a dollop of whipped cream for an extra indulgence. Refrigerate the pie for up to three days to keep it fresh.
