Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Whisk together the all-purpose flour, baking soda, and salt until evenly combined.
- Cream the softened butter with granulated and brown sugars until the mixture is fluffy and lighter in color.
- Beat in the large egg, vanilla extract, lemon zest, and lemon juice into the butter mixture until well combined.
- Gradually mix in the dry ingredients from the first bowl until just combined. Be cautious not to overmix.
- Fold in the chopped fresh strawberries.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart.
- Bake for 10-12 minutes, or until the cookies are lightly golden around the edges. Allow them to cool on a wire rack before serving.
Notes
Don’t overmix the dough! For a healthier option, consider using whole wheat flour or a sugar substitute.
