Instructions
- Cream the softened butter and sugar together in a large bowl until light and fluffy (about 3 to 5 minutes).
- Beat in the egg and vanilla extract until thoroughly combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the butter mixture, mixing until a dough forms. Optionally, add green food coloring.
- Wrap the dough in plastic wrap and chill in the refrigerator for 1 hour.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled dough on a floured surface to about ¼ inch thickness and cut into desired shapes.
- Place cookie shapes on a lined baking sheet and bake for 8 to 10 minutes until edges are lightly golden.
- Let the cookies cool completely before decorating with icing and sprinkles.
