Ingredients

  • 4 roasted tomatoes
  • 4 roasted tomatillos
  • 1 small quartered onion
  • 2 unpeeled garlic cloves
  • 1-2 jalapeños
  • 1 tablespoon olive oil
  • Salt to taste
  • Chopped cilantro (optional)
  • 1 lime juice

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Toss the tomatoes, tomatillos, onion, garlic, and jalapeños with olive oil and salt on a baking sheet.
  3. Roast in the oven for 20-25 minutes until charred and softened.
  4. Remove the baking sheet from the oven and cool slightly.
  5. Squeeze the garlic out of its skins and add all roasted ingredients to a blender or food processor.
  6. Add chopped cilantro and lime juice; blend until you reach your desired consistency.
  7. Taste and adjust seasoning if necessary, then serve with tortilla chips or as a topping for your favorite dishes.
