- 4 medium Beets
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- Fresh Herbs (optional) To taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and trim the beets, leaving a bit of the stem. Wrap each beet individually in aluminum foil.
- Place the wrapped beets on a baking sheet and roast for about 45-60 minutes, or until tender when pierced with a fork.
- Once done, remove from the oven and allow to cool slightly; then peel the skins off.
Notes
For added flavor, consider seasoning with fresh herbs like thyme or rosemary. Drizzle with balsamic vinegar or top with crumbled feta or nuts for variations.
