Ingredients

  • 3 cups sparkling water

Instructions

  1. Combine the freshly chopped rhubarb with sugar and water in a medium saucepan, stirring to dissolve.
  2. Place the saucepan over medium heat, bringing the mixture to a boil. Lower the heat and allow it to simmer for 15 to 20 minutes, or until the rhubarb is soft.
  3. Strain the mixture through a fine mesh sieve into a pitcher, discarding the solids.
  4. Mix in the fresh lemon juice to enhance the flavor after the syrup has cooled.
  5. Serve by mixing one part of the rhubarb syrup with three parts sparkling water, adjusting to taste preference.
