Instructions

- Whisk the eggs and vanilla extract in a separate bowl until combined, then add this mixture to the rhubarb mixture.
- Pour the rhubarb filling over the crust evenly once it is done baking.
- Bake in the preheated oven for 35-40 minutes or until the filling is set and slightly bubbling around the edges.
- Allow the bars to cool completely in the dish before cutting them into squares for clean cuts.
