- 2 cups chopped rhubarb
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup water
Instructions
- Combine the chopped rhubarb, honey, water, and ground cinnamon in a saucepan.
- Cook the mixture over medium heat until the rhubarb is soft, about 10 to 15 minutes.
- Stir in the vanilla extract and continue cooking for an additional 5 minutes.
- Use an immersion blender to puree the mixture until smooth.
- Transfer the warm Rhubarb Butter to a jar and store it in the refrigerator for up to two weeks.
Notes
Use fresh rhubarb for the best flavor. You can substitute maple syrup for honey if desired.
