Instructions
- Preheat your oven to 350°F (175°C) and line your baking trays with parchment paper.
- In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt until well combined.
- Cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then stir in vanilla extract and red food coloring until evenly mixed.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined. Cover and chill the dough in the refrigerator for about 30 minutes.
- Form balls of chilled dough, roll in powdered sugar, and place them on prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, until the edges are set but the centers remain soft.
- Let the cookies cool for a few minutes before transferring them to a wire rack to cool completely.

For a healthier option, consider using whole wheat flour or reducing the sugar. Add white chocolate chips for a fun twist!
