A deliciously fluffy Raspberry Swirl Brioche Loaf filled with sweet raspberries and buttery bread, perfect for brunch or dessert.

  • Total Time: 50 minutes
  • Yield: 1 loaf 1x

Ingredients

Scale
  • 4 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 tablespoons active dry yeast
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup unsalted butter, melted
  • 1 cup fresh raspberries
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, yeast, and salt until combined.
  2. In a separate bowl, whisk the eggs, melted butter, warm milk, and vanilla extract. Combine with the dry ingredients to form a soft dough.
  3. Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth and elastic.
  4. Place the kneaded dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
  5. Punch down the dough, roll it out into a rectangle, mix in crushed raspberries, roll tightly, and seal the ends.
  6. Place the rolled dough in a greased loaf pan. Preheat the oven to 350°F (175°C).
  7. Bake for 30-35 minutes until golden brown and sounds hollow when tapped.

Notes

Serve warm with a dusting of powdered sugar or spread with butter. Pairs well with tea or coffee.
