Ingredients

- 2 cups potatoes, peeled and cubed
- 1 cup all-purpose flour
- 1 egg
- 1/4 teaspoon salt
- 8-10 ripe plums, pitted
- 1/4 cup sugar
- 1/2 cup breadcrumbs
- 3 tablespoons butter
- Cinnamon (optional, for sprinkling)
Instructions
- Boil the potatoes until tender, about 15-20 minutes. Drain and mash, allowing to cool slightly.
- In a mixing bowl, combine cooled mashed potatoes with flour, egg, and salt. Mix until a smooth dough forms.
- Roll out the dough to about 1/4 inch thick on a floured surface and cut into 3-inch squares.
- Place a plum in the center of each square and seal the dough around it.
- Bring a large pot of salted water to a boil and drop the dumplings in. They are done when they float to the top, about 5-7 minutes.
- Roll the cooked dumplings in a mixture of toasted breadcrumbs and sugar.
Notes
Serve the dumplings warm with a sprinkle of cinnamon and a dollop of whipped cream. They are fantastic alongside vanilla ice cream, drizzled with maple syrup.
