Ingredients

  • 1/2 cup shelled pistachios (raw or roasted, unsalted)
  • 1 cup full-fat Greek yogurt or coconut cream
  • 34 tbsp maple syrup or honey (to taste)
  • 1/2 tsp vanilla extract
  • 1/4 cup milk (dairy or non-dairy)

Instructions

  1. Soak the pistachios in hot water for about 15–20 minutes.
  2. After soaking, drain the pistachios and transfer them to a blender. Add the Greek yogurt or coconut cream, maple syrup or honey, vanilla extract, and milk. Blend until smooth.
  3. Pour the mixture into popsicle molds or paper cups. Insert popsicle sticks and freeze for at least 4 to 6 hours.
  4. To serve, remove from the molds. Run warm water over the molds if needed.

Notes

Soaking pistachios enhances creaminess. Use coconut cream for a dairy-free version.
