- 1/2 cup shelled pistachios (raw or roasted, unsalted)
- 1 cup full-fat Greek yogurt or coconut cream
- 3–4 tbsp maple syrup or honey (to taste)
- 1/2 tsp vanilla extract
- 1/4 cup milk (dairy or non-dairy)
Instructions
- Soak the pistachios in hot water for about 15–20 minutes.
- After soaking, drain the pistachios and transfer them to a blender. Add the Greek yogurt or coconut cream, maple syrup or honey, vanilla extract, and milk. Blend until smooth.
- Pour the mixture into popsicle molds or paper cups. Insert popsicle sticks and freeze for at least 4 to 6 hours.
- To serve, remove from the molds. Run warm water over the molds if needed.
Notes
Soaking pistachios enhances creaminess. Use coconut cream for a dairy-free version.
