A quick and easy Pesto Flatbread Pizza that is full of flavor and customizable with your favorite toppings, perfect for busy weeknights.

Ingredients

  • 1 large or 2 small flatbread
  • 1/3 cup pesto sauce
  • 1 cup mozzarella cheese, shredded
  • 1-2 tomatoes, sliced
  • A handful of fresh basil, chopped
  • 1 cup grilled chicken, sliced (optional)
  • 1 cup mixed vegetables
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread the pesto sauce evenly over the flatbread.
  3. Add a generous layer of mozzarella cheese on top. For a Margherita-style flatbread, add sliced tomatoes and fresh basil. For a heartier option, layer on grilled chicken and mixed veggies.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Bake in the oven for about 10-15 minutes until the cheese is melted and bubbly.
  6. Let it cool slightly before slicing and serve warm.

Notes

Use fresh basil for maximum flavor. Store leftovers separately in the fridge for up to 3 days.
