Ingredients

  • 2 cups fresh peas
  • 1 cup fresh mint leaves
  • 1 medium chopped onion
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1/2 cup buttermilk
  • Salt to taste
  • Pepper to taste
  • Lemon juice for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat and add the chopped onion. Sauté until translucent.
  2. Stir in the fresh peas and cook for a few minutes until heated through.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Lower the heat and let the soup simmer for about 10 minutes.
  5. Remove from heat and add fresh mint leaves.
  6. Blend the soup with an immersion blender until smooth and creamy.
  7. Stir in the buttermilk and season with salt and pepper to taste.
  8. Serve hot or cold, garnished with lemon juice if desired.
