Instructions
- Heat the olive oil in a large pot over medium heat and add the chopped onion. Sauté until translucent.
- Stir in the fresh peas and cook for a few minutes until heated through.
- Pour in the vegetable broth and bring the mixture to a boil.
- Lower the heat and let the soup simmer for about 10 minutes.
- Remove from heat and add fresh mint leaves.
- Blend the soup with an immersion blender until smooth and creamy.
- Stir in the buttermilk and season with salt and pepper to taste.
- Serve hot or cold, garnished with lemon juice if desired.
