Crispy, salty, and surprisingly satisfying, these zucchini chips make a perfect snack for any time of day!

Ingredients

  • 2 zucchinis, thinly sliced
  • 1 tbsp olive oil
  • Sea salt to taste

Instructions

  1. Preheat the oven to 225°F.
  2. Line two baking sheets with parchment paper.
  3. Slice the zucchinis into very thin rounds, about 1/8 inch thick, and pat dry with a paper towel.
  4. Toss zucchini slices with olive oil until evenly coated.
  5. Arrange slices in a single layer on prepared baking sheets and sprinkle lightly with sea salt.
  6. Bake for about 30-40 minutes, flipping halfway through and monitoring closely to prevent burning.

Notes

For variety, try adding garlic powder, smoked paprika, or nutritional yeast to the zucchini slices before baking.
