- 2 cups cooked rice
- 2 eggs
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat 2 tablespoons of vegetable oil in a large frying pan over medium heat.
- Add the mixed vegetables and stir-fry for 3-4 minutes until tender.
- Push the vegetables to one side of the pan and crack 2 eggs into the pan, scrambling until fully cooked (about 2-3 minutes).
- Add cooked rice, soy sauce, sesame oil, salt, and pepper; mix until well-combined and heated through.
- Garnish with sliced green onions before serving.
