One-Pan Egg Fried Rice is a quick and comforting dish made with scrambled eggs and colorful veggies, perfect for busy weeknights.

Ingredients

  • 2 cups cooked rice
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil

  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large frying pan over medium heat.

  3. Push the vegetables to one side of the pan and crack 2 eggs into the pan, scrambling until fully cooked (about 2-3 minutes).
