Instructions
- In a mixing bowl, combine ricotta, heavy cream, powdered sugar, and vanilla extract. Beat until smooth and creamy. Chill.
- In a saucepan, heat granulated sugar over medium heat, stirring until it dissolves and turns amber. Add butter and stir until melted, then whisk in heavy cream and sea salt. Cool slightly.
- Layer the chilled ricotta mixture, diced mango, and caramel sauce in serving glasses. Top with chopped pistachios and mint leaves. Serve immediately or chill for up to 2 hours.
