Ingredients

  • 1/2 cup Heavy Cream (for Ricotta)
  • 2 tablespoons Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Granulated Sugar (for Caramel)
  • 2 tablespoons Unsalted Butter
  • 1/4 cup Heavy Cream (for Caramel)
  • Pinch of Sea Salt
  • 2 ripe Mangoes, diced
  • Pistachios, chopped (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. In a mixing bowl, combine ricotta, heavy cream, powdered sugar, and vanilla extract. Beat until smooth and creamy. Chill.
  2. In a saucepan, heat granulated sugar over medium heat, stirring until it dissolves and turns amber. Add butter and stir until melted, then whisk in heavy cream and sea salt. Cool slightly.
  3. Layer the chilled ricotta mixture, diced mango, and caramel sauce in serving glasses. Top with chopped pistachios and mint leaves. Serve immediately or chill for up to 2 hours.
