- 4 Eggs, separated, room temperature
- ¾ cup Caster sugar
- 125 g Melted butter
- 1 tsp Vanilla extract
- ¾ cup Plain flour, sifted
- 2 cups Lukewarm milk
- ¼ cup Icing sugar (for dusting)
Instructions
- Preheat your oven to 340°F (170°C) and prepare an 8-inch square pan lined with parchment paper.
- In a large mixing bowl, whip the egg whites until stiff peaks form and set aside.
- In another bowl, beat the egg yolks with the caster sugar until pale and fluffy. Gradually mix in the melted butter and vanilla extract, followed by the sifted flour. Slowly add the lukewarm milk until smooth, then gently fold in the whipped egg whites.
- Pour the batter into the prepared baking pan, spreading it out evenly.
- Bake for approximately 35 to 60 minutes, until the top is golden brown. Allow the cake to cool in the pan before dusting with icing sugar and slicing into servings.
Notes
For a lower glycemic index, consider using coconut sugar or maple syrup instead of caster sugar. This cake can be served warm or chilled and pairs well with whipped cream or ice cream.
