- 1 cup lentils
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, chopped
- 1/4 cup parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Rinse the lentils under cold water to remove any debris or dust.
- Combine the rinsed lentils with 2 cups of water in a pot. Bring to a boil, then reduce to a simmer for about 20 minutes until they are tender. Drain and set aside to cool.
- In a large bowl, mix the cooled lentils with diced cucumber, bell pepper, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine. Let the salad sit for about 15 minutes to allow the flavors to meld. Serve chilled or at room temperature.
Notes
This salad pairs wonderfully with grilled chicken or shrimp for a filling dinner.
