Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut milk (or almond milk)
  • 1/4 cup fresh lemon juice
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. In a mixing bowl, combine the chia seeds with coconut milk, fresh lemon juice, honey or maple syrup, and vanilla extract. Stir well.
  2. Add the lemon zest to the mixture and mix again until well combined.
  3. Cover the bowl with plastic wrap or a lid and place in the refrigerator. Allow to set for at least 2 hours, preferably overnight.
  4. Once thickened, give it a stir and serve chilled, garnished with fresh fruits or extra lemon zest.

Notes

Store the pudding in an airtight container in the fridge for up to three days.
