- 1/4 cup chia seeds
- 1 cup coconut milk (or almond milk)
- 1/4 cup fresh lemon juice
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions
- In a mixing bowl, combine the chia seeds with coconut milk, fresh lemon juice, honey or maple syrup, and vanilla extract. Stir well.
- Add the lemon zest to the mixture and mix again until well combined.
- Cover the bowl with plastic wrap or a lid and place in the refrigerator. Allow to set for at least 2 hours, preferably overnight.
- Once thickened, give it a stir and serve chilled, garnished with fresh fruits or extra lemon zest.
Notes
Store the pudding in an airtight container in the fridge for up to three days.
