- 2 cups Rolled oats
- 1 cup Mixed nuts (almonds, walnuts, pecans)
- 1/2 cup Seeds (pumpkin seeds, sunflower seeds)
- 1/2 cup Unsweetened coconut flakes
- 1/2 cup Dates (chopped)
- 1/4 cup Coconut oil (melted)
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla extract
- Salt (to taste)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, mixed nuts, seeds, coconut flakes, and chopped dates; stir well.
- In a separate bowl, mix melted coconut oil, cinnamon, vanilla extract, and a pinch of salt.
- Pour the wet mixture over the dry ingredients and stir until evenly coated.
- Spread the mixture on a baking sheet lined with parchment paper.
- Bake for 20 to 25 minutes, stirring halfway through until golden brown.
- Allow to cool completely before storing in an airtight container.
Notes
Variations include substituting nuts or seeds as preferred. Can be made into granola bars by mixing with nut butter.
