Ingredients

  • 2 cups crushed fresh strawberries
  • 2 cups sugar
  • 3/4 cup water
  • 1/4 cup lemon juice
  • 1 package fruit pectin

Instructions

  1. Crush the fresh strawberries in a large bowl until you have a mix of puree and small chunks.
  2. Stir in the sugar until well mixed, and let sit for about 10 minutes until the sugar has completely dissolved.
  3. Gather a saucepan and bring the water and lemon juice to a boil over medium heat.
  4. Once boiling, stir in the fruit pectin and continue boiling for 1 minute to activate the pectin.
  5. Pour the hot pectin mixture into the strawberry-sugar blend, mixing thoroughly.
  6. Transfer the jam into clean freezer-safe jars, leaving some headspace as it will expand when frozen.
  7. Allow the jars to sit at room temperature for 24 hours to set before placing them in the freezer.

Notes

Best if made with fresh, ripe strawberries for optimal flavor. You can also freeze the jam for up to a year.
