- 200 grams Udon noodles
- 4 cups Chicken or vegetable broth
- 2 tablespoons Soy sauce
- 1 tablespoon Miso paste (optional)
- 2 stalks Green onions, for garnish
- 200 grams Tofu or protein of choice (optional)
- 2 cups Mixed vegetables (bok choy, mushrooms, carrots recommended)
- 1 teaspoon Sesame oil (optional)
Instructions
- Prepare the broth: In a large pot, heat the broth over medium heat. Add soy sauce and stir in the miso paste if desired. Let simmer for a few minutes.
- Cook the noodles and vegetables: Cook the udon noodles according to package instructions (about 8-10 minutes). When nearly done, add mixed vegetables to the pot.
- Assemble and garnish: Once the noodles are cooked and vegetables are tender, add them to the broth. If using tofu or any proteins, add them in. Serve topped with sliced green onions and a drizzle of sesame oil, if desired.
Notes
For a spicy version, add sliced jalapeños or chili flakes. To boost nutrition, substitute tofu with chicken or tempeh.
