- 2 pounds Baby Potatoes
- 3 tablespoons Olive Oil
- 2 tablespoons Fresh Herbs (rosemary, thyme, parsley)
- 2 cloves Garlic, minced
- Juice of 1 Lemon
- Zest of 1 Lemon
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a large bowl, combine the halved potatoes with olive oil, minced garlic, fresh herbs, lemon juice, lemon zest, salt, and pepper. Mix well.
- Spread the potatoes evenly on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through until golden and tender.
Notes
For a flavor twist, consider adding paprika or cayenne pepper before roasting. Leftovers can be reheated and served with nacho cheese or a fried egg.
