Crispy on the outside and tender on the inside, these Herb Roasted Potatoes are the ultimate side dish packed with fresh herb flavors and zesty lemon.

Ingredients

  • 2 pounds Baby Potatoes
  • 3 tablespoons Olive Oil
  • 2 tablespoons Fresh Herbs (rosemary, thyme, parsley)
  • 2 cloves Garlic, minced
  • Juice of 1 Lemon
  • Zest of 1 Lemon
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, combine the halved potatoes with olive oil, minced garlic, fresh herbs, lemon juice, lemon zest, salt, and pepper. Mix well.
  4. Spread the potatoes evenly on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through until golden and tender.

Notes

For a flavor twist, consider adding paprika or cayenne pepper before roasting. Leftovers can be reheated and served with nacho cheese or a fried egg.
