Ingredients

  • 2 cups rolled oats
  • 1 cup applesauce
  • 2 medium chopped apples
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon.
  3. In another bowl, mix together the applesauce, honey or maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the chopped apples and nuts if using.
  5. Pour the batter into the prepared cake pan and spread it evenly.
  6. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let it cool before slicing.

Notes

Serve slices warm with a dollop of Greek yogurt or a drizzle of almond butter. Great with tea or coffee.
