- 2 cups rolled oats
- 1 cup applesauce
- 2 medium chopped apples
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon.
- In another bowl, mix together the applesauce, honey or maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the chopped apples and nuts if using.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool before slicing.
Notes
Serve slices warm with a dollop of Greek yogurt or a drizzle of almond butter. Great with tea or coffee.
