- 1 cup oats
- 1/2 cup mixed nuts (e.g. almonds, walnuts, cashews)
- 1/2 cup mixed seeds (e.g. pumpkin, sunflower)
- 1/2 cup dried fruits (e.g. cranberries, raisins)
- 1 teaspoon cinnamon (optional)
- 1/3 cup honey or maple syrup
- 1/4 cup nut butter (e.g. almond, peanut)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the oats, mixed nuts, mixed seeds, dried fruits, and cinnamon. Stir until well mixed.
- In a separate bowl, mix the honey or maple syrup, nut butter, and vanilla extract until smooth.
- Poor the wet mixture into the dry ingredients and mix thoroughly.
- Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly.
- Bake for 15 to 20 minutes until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
These cookies can be stored in an airtight container. Consider variations by adding chocolate chips or using dried fruits for different flavors.
