Ingredients

  • 1/2 cup mixed seeds (e.g. pumpkin, sunflower)
  • 1/2 cup dried fruits (e.g. cranberries, raisins)
  • 1 teaspoon cinnamon (optional)
  • 1/3 cup honey or maple syrup
  • 1/4 cup nut butter (e.g. almond, peanut)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, mixed nuts, mixed seeds, dried fruits, and cinnamon. Stir until well mixed.
  3. In a separate bowl, mix the honey or maple syrup, nut butter, and vanilla extract until smooth.
  4. Poor the wet mixture into the dry ingredients and mix thoroughly.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly.
  6. Bake for 15 to 20 minutes until the edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes
